Ingredients:
13-15 Fresh Lemons
2 Bottles Vodka [100 Proof]
4 Cups Granulated Sugar
5 Cups Mineral Water

Preparation Directions:
The first step to this wonderful Limoncello is to pick thick skinned lemons for easy zesting. Once you pick your lemons wash them to remove any residue left that might contaminate the cooking process. Dry and set aside. Zest the lemons just enough. You don’t want the pith; the pith will spoil your limoncello. Now combine the lemon zest and 1 bottle of vodka to a large glass jar that can be topped. Be sure to add the lemon zest to the jar right once it’s zested. Top the glass jar and let it stand in a cool dark place for 1 month. Now that the limoncello mixture is ready combine the sugar and water in a large pot over medium heat, allow thickening, about 7 minutes. Allow to cool and add the limoncello mixture along with the other bottle of vodka. Now place back in the large glass jar, marinate an additional 1 month. After the resting period, strain the glass bottle to remove the zest and discard. Keep your Italian limoncello in the freezer ready to serve.
